Sensory Analysis

The primary driver for this category is Solubility Retention. Unlike standard decafs that can taste flat or woody, our selection process prioritizes high-density lots with a high concentration of organic acids. We evaluate these coffees to ensure they maintain a structured sweetness and a clean finish, free from the common savory or metallic taints associated with decaffeination processing methods.

Roasting Technicality

Roasting decaffeinated coffee requires a specialized thermal approach. Since the decaffeination process makes the cellular structure of the bean more porous, it transfers heat more efficiently and darkens faster. By managing the Maillard reaction with precision, we develop the sugars without over-roasting the fragile fiber of the bean, preserving the vibrant fruit-derived acidity.
