Our tasting notes: Cardamon, Cherry, Cocoa, Guava, Lemon/Lime

We chose this lot as our first coffee because its story mirrors our own. Finca La Terraza is managed by Juliana Guevara and Weimar Lasso. Their partnership as husband and wife reflects the very foundation of our roastery, where small-scale craft is used to build a meaningful, lasting legacy.

The story of this coffee begins in Ethiopia, the birthplace of the seed. The Java cultivar is an ancient lineage. It is a direct descendant of Ethiopian landraces that traveled through Yemen and Indonesia before finding a home in the rugged Southern Huila highlands.

At Finca La Terraza, the terroir is defined by beautiful contrasts. The farm sits at the steep slopes of the Magdalena River valley, where the microclimate is characterized by frigid nights. This cold acts as a natural brake, slowing the maturation of the cherry. The resulting seed's high density protects the delicate aromatics. Java cultivar is naturally resistant to disease, it thrives with minimal inputs, offering a pure snapshot of ancient genetics meeting diverse volcanic soils.

Juliana and Weimar treat this Java lot useing a traditional washed process. By fermenting the coffee in simple concrete tanks, they ensure the inherent genetics of the plant remain the protagonist. For them, the value of this coffee extends beyond the cup. They see high-quality microlots as a direct pathway to well-being for the women, children, and elderly members of farming households whose labor often goes unseen. When you drink this, you are honoring the "pride in the details" that allows a three-hectare farm to compete on the world stage and support its community in the process.
